Korean Style Marinated Beef is where thinly sliced beef is marinated in a vegetable, fruit, and soy-based seasoning, then cooked to perfection. The sweet and savory seasoning goes well with rice and is easy to make: making it a perfect weeknight meal. This recipe is one of the heavy rotations in our household.

About slicing beef for this recipe:

  • Ask your butcher to do it for you.  Make sure to explain what you are using it for so they will side them paper thin. Most butcher likes to slice beef when its frozen, so ask in advance.
  • Slice it yourself.  You may “partially” freeze the beef and, using a sharp knife, slice it across its grain.  Use extreme caution when cutting frozen meat.
  • Final store that sells pre-sliced beef.  Visit your local Asian butcher or grocery store to see if they carry pre-sliced meat.  Trader Joe’s sells pre-sliced beef in a refrigerated section which works great for this recipe.

Ingredients

  • 1 pound beef rib-eye, top sirloin, or flank steak: thinly sliced
  • 1/2 medium yellow onion thinly sliced
  • 1 medium carrot julienned
  • 2 springs green onions cut into 1/2 inch length
  • 2-4 teaspoon cooking oil divided
  • sriracha or gochujang for serving

Marinade

  • 1/2 medium yellow onion cut into chunks
  • 2-3 cloves garlic halved
  • 1/2 medium apple or pear roughly chopped
  • 2-3 tablespoon brown sugar
  • 1/3 cup soy sauce
  • 3 tablespoon sesame oil

Instructions

To marinate meat

  • Slice the beef as thin as possible (think of Philly Steak)

  • Add all the marinade ingredients into a blender and blend until smooth.

  • In a bowl or a food grade plastic bag, mix the beef and marinade. Refrigerate the meat for at least one hour, and up to 5 hours.

  • Take out the beef one hour before cooking so the meat is at room temperature when cooking.

To cook

  • Place a frying pan over medium heat. Add 1 teaspoon of cooking oil. Add sliced onion and carrots and stir fry until tender but not too soft. Take the vegetable out on a plate, cover, and set them aside.

  • Wipe the frying pan clean and add 1 teaspoon of oil. Work in two batches: add marinated beef in a single layer when the pan is piping hot. Cook one side, turn, and cook the other side (do not over-mix the meat). Take the meat out on a plate and set it aside.

  • Wipe the frying pan clean and add 1 teaspoon of oil. Cook the remaining beef.

  • Once all the beef is cooked, return the other cooked beef, carrots, and onions to the pan along with the green onions. Toss everything together. Sprinkle sesame seeds and serve with a bowl of rice and hot sauce (optional).
