To celebrate the Year of the Dragon, the chefs at Si Chuan Dou Hua have crafted exclusive set menus, ranging from $108++ to $388++ per person.  We were invited to try some of the dishes across the various menus.  We have visited Is Chuan Dou Hua (both their Parkroyal @ Beach Road and UOB Plaza restaurants) several times and know that they serve quality Chinese food that is focused on Sichuan and Cantonese cuisines.

As with every meal during Chinese New Year, we started off with a Yusheng.  Is Chuan Dou Hua’s Double Prosperity Yusheng has a generous serving of smoked salmon and Crispy Fish Skin.

The soup we had was the double boiled South American Sea Cucumber with Matsutake Mushroom and Dried Scallops.  Although it is chock full of nourishing ingredients, we love how Chef still managed to keep a clean profile of the soup.  The Matsutake mushrooms had a firm, meaty texture and gave the soup its earthy flavour.

The next dish won praises around the table – Australian Cod Fish with garlic and preserved vegetables.  The broth is slightly spicy, with obvious Sichuan influence through the use of preserved vegetables.  The cod fish was also well executed, without any fishiness.

Our poultry dish was the Braised Quail with Abalone with Black Truffle.  This came sizzling in a claypot.  The mushrooms, garlic, ginger and other aromatics added depth to this dish and with the black truffle elevates it and would be one for those who love truffle.  The only drawback is that some bits of quail were quite tough.

We also liked the Braised White Cabbage with Dried Scallop.  The white cabbage is cooked till soft and soaks up the broth.  It is not particularly fancy but is comforting.

Carbs came in the form of Handmade Noodles in Premium Soya Sauce with Lobster.  The noodles were springy and the lobster is fresh.  I would usually pick noodles over rice so this pairing of lobster and noodles would be my choice in a set menu.

We also had a slice of pan-fried Auspicious Nian Gao that is not too sweet.  This Nian Gao is also available for takeaway.

As with every visit to Si Chuan Dou Hua, we had to round off the meal with their Homemade Fine Bean Curd with Snow Lotus Seed and Goji Berries.  The bean curd is very soft, almost custard-like, and easily slides down your throat.
